Twice Baked Potatoes
Serves 3 to 6
- 3 - Baking potatoes
- 1 cup - Bacon, diced
- ½ cup - Onion, chopped
- ¾ cup - Sour cream
- ½ cup - Milk
- 2 tablespoons - Butter or margarine, softened
- ¼ teaspoon - Salt
- ¼ teaspoon - Pepper
- Tabasco sauce, to taste
Scrub potatoes and pierce in several places with fork.
Bake 1 hour or until tender in 325° oven.
In large skillet, fry bacon & onion over medium heat until bacon is crisp, drain grease.
When potatoes are cool, cut each in half lengthwise, scoop out the pulp.
Mash the pulp with remaining ingredients, except the bacon mixture.
Stir in half of the bacon mixture.
Spoon an equal amount of potato mixture into each shell.
Place potatoes on rack in broiler pan.
Preheat broiler. Broil 2" from heat source until lightly browned.
Sprinkle with remaining bacon mixture, serve.
