Sweet Potato Pie
- 1½ cups - Sweet potatoes, cooked & mashed
- 1½ cups - Sugar
- 2½ tablespoons - Butter or margarine,softened
- 2/3 cup - Evaporated Milk
- 3 - Egg yolks, beaten
- 1 teaspoon - Vanilla Extract
- 1 teaspoon - Nutmeg
- 3 - Egg Whites, room temperature
- 1 - 9" deep dish pastry shell, uncooked
Combine sweet potatoes, sugar & butter, stir well.
Stir in milk, egg yolks, vanilla & nutmeg.
Set aside.
Beat egg whites at high speed until stiff peaks form.
Fold egg whites into sweet potato mixture.
Pour into unbaked pie shell & bake at 375° for 10 minutes.
Reduce heat to 350° & bake 45 minutes or until set.
