Sweet Potato & Crab Chowder
2 tbls - Olive oil
¼ cup - Bacon (about 2 ounces), chopped
¼ cup - Shallots, chopped
2 cloves - Garlic, minced
2 cups - Sweet potatoes, peeled and diced
1 cup - Chicken or vegetable broth
1 cup - Heavy cream
2 cups - Milk
2 tbls - Flour
1 pound - Crabmeat
3 tbls - Chives, chopped
Salt and black pepper
In a large soup pot over medium heat, heat the oil.
Add the bacon; cook, stirring for 1 minute.
Add the shallots and cook for 3 minutes.
Add the garlic, sweet potatoes, and broth; bring to a boil.
Cover and cook for 15 minutes or until the potatoes are tender.
In a medium bowl, whisk together the cream, milk, and flour.
Add to the soup and cook until the mixture begins to thicken.
Add the crabmeat and the chives.
Season with the salt and pepper to taste.
