Spanish Potato Salad
Serves 8
- 6 cups - New potatoes, sliced & cooked
- 1/2 cup - celery, sliced
- 2 - red onions, sliced thin
- 4 - Oranges, sectioned
- Salad greens (optional)
- 1/3 cup - Mayonnaise
- 1/3 cup - Sour cream
- 1/2 cup - Orange juice
- 1/2 teaspoon - Tabasco pepper sauce
Arrange mixture of potatoes, celery, onion & orange sections in salad bowl lined with salad greens.
Chill.
Combine remaining ingredients to make dressing.
When ready to serve, toss salad dressing with salad coating each piece.
Season to taste with salt & additional Tabasco sauce.
