Robyn's Potato Bake
1 medium - Sweet potato
2 large - Potatoes
1 - Onion, diced
2 cloves - Garlic
Mixed herbs
Butter
Sour cream
1 - Zucchini, sliced
1 ripe - Tomato, chopped
1 cup - Cheddar cheese, grated
Freshly ground black pepper
Oil for frying
Boil potato and sweet potato in separate pots.
Meanwhile fry the onion, garlic and mixed herbs in oil.
Add the tomato when onion is brown and simmer until nice and mushy (you may want to use canned tomatoes or add water).
When potatoes are cooked, mash the sweet potato with butter and black pepper.
Mash the other potatoes with sour cream and half of the cheese.
Then layer the sweet potato in bottom of a glass baking dish.
Layer tomato mixture on top, then sliced Zucchini pieces.
On top of this put the potato mixture and finish off with remaining cheese.
Put in 350 degree oven for half an hour or so, until cheese on top is browned.
