Potato & Meat Stuffed Pumpkin
- 1 medium - Pumpkin (6 to 8 pounds)
- 6 medium - Potatoes, peeled
- 1½ Lbs - Ground beef
- 1 medium - Onion, sliced
- 2 Tbls - Cooking oil
- Salt & pepper
- Bell seasoning
- 1 can - Cream of mushroom soup
Cut top off pumpkin and clean out seeds and stringy fibers.
Boil potatoes in water until tender, then mash.
Cook onions in oil with ground beef in frying pan, drain grease.
Add seasonings to taste.
Mix together the ground beef & mashed potatoes in frying pan.
Then add the mushroom soup and mix well.
Fill the pumpkin with this mixture.
Bake in a pan at 350° for 2 hours or until the shell is tender.
* Chicken, ham or shrimp can be substituted for the ground beef.
