Potato Latkes
- 6 medium - Potatoes, peeled
- 1 teaspoon - Salt
- ¼ teaspoon - Pepper
- 1 tablespoon - Cooking oil
- 1 - Onion, minced
- 3 - Eggs
- ¼ cup - Flour
- 2 teaspoons - Baking powder
- Oil for frying
- Sour cream, apple sauce or honey
Grate potatoes and pat dry with paper towels.
Blend in remaining ingredients, except sour cream, applesauce or honey.
Heat oil over medium-high heat in a large skillet.
Drop a large spoonful into the hot oil, flatten with back of spoon.
Brown on both sides, turning only once.
Drain on paper towels.
Serve with sour cream, apple sauce or honey.
