Potato Clam Chowder
Yield: 4 servings
- 1 large - Potato, pared & diced
- 1 cup - Water
- 1 tablespoon - Butter
- 1 medium - Onion, chopped
- 1 (7½ ounces) can - Minced clams
- 1 package - Cream of leek soup mix
- 1 cup - Water
- 1 cup - Clam juice
- ½ cup - Cream
Cook potato in 1 cup water until tender.
Meanwhile, melt butter in skillet; add onion and cook until golden.
Drain clams adding liquid to potato & water.
Mix soup mix with remaining 1 cup water.
Add to potato mixture, then add onion & clam juice.
Bring to boil stirring frequently.
Add drained clams, partially cover and simmer 5 minutes.
Stir in cream and heat.
