Easter Sunday Potatoes & Eggs
Serves 4
- 4 - Potatoes, boiled
- ¼ cup - Cooking oil
- ½ cup - Cooked ham, diced
- ¼ cup - Onion, sliced
- ¼ cup - Green pepper, thinly sliced
- 2 tablespoons - Pimento, diced
- 6 - Eggs, beaten
- ¼ teaspoon - Salt
- Dash - Black pepper
- ½ cup - Swiss or Jack cheese, finely diced
- Parsley, chopped
Peel boiled potatoes and cut into ½" cubes.
In skillet, heat oil over medium heat.
Add potatoes and fry until evenly browned.
Add ham, onion, green pepper & pimento.
Cook, stirring occasionally, until vegetables are crisp-tender.
In bowl, combine eggs, salt & pepper and add to potato mixture.
Stir in diced cheese.
Cook, stirring occasionally, until eggs are cooked & cheese begins to melt.
Sprinkle with chopped parsley.
