Duchess Potatoes
- 2 cups - Mashed potatoes, hot
- 1 tablespoon - Butter or margarine
- 1 - Egg yolk, beaten
- Salt & pepper
- 1 tablespoon - Butter or margarine, melted
To the potatoes; add the butter or margarine, egg yolk, salt & pepper to taste.
Mix well.
On a greased baking sheet; mound 1 tablespoon of the potatoes mixture.
Drizzle with remaining melted butter or margarine.
Bake in oven at 450° for 10 to 12 minutes.
Serve them hot.
