Crispy Potato Wedges (Jo-Jo's)
Serves 6
- 4 to 6 medium - Potatoes
- ¼ cup - Olive oil
- ½ teaspoon - Salt
- ¼ teaspoon - Pepper
- ½ teaspoon each - Dried Basil, Thyme & Oregano leaves
- ¼ teaspoon - Paprika
- ½ cup - Parmesan cheese, grated
Combine olive oil & seasonings in a bowl.
Scrub unpeeled potatoes well.
Cut each potato in half lengthwise, then in thirds.
Coat each slice in the seasoned oil.
Spread in a single layer on a greased baking sheet.
Bake at 450° for 15 minutes.
Sprinkle with the cheese.
Bake 15 minutes longer.
