Barbecue Potatoes
- 6 medium - Potatoes, sliced
- 1 large - Onion, sliced
- 2 - Green peppers, sliced
- Salt, pepper, oregano & thyme, to taste
- Cooking oil
Have ready a large enough sheet of aluminum foil to wrap up all the ingredients.
Layer the foil with the potato, onion & pepper slices.
Sprinkle on the spices, to your taste.
Drizzle some oil over the top and mix .
Wrap the foil around the vegetables.
Grill the vegetables for about 20 minutes, or until tender.
This can also be baked in the oven, using a baking dish instead of foil.
