Baked Tuna Stuffed Potatoes
Serves 8
- 8 large - Baking potatoes (4 pounds)
- 2 tablespoons - Butter or margarine
- 2 cans - Tuna, drained
- 1 can - Cheddar cheese soup
- ¼ teaspoon - Paprika
- ¼ teaspoon - Salt
- 4 slices - Cheese, halved
Heat oven to 425°.
Wash potatoes; rub skins all over with butter. Prick with fork.
Bake on rack of oven 50-60 minutes or until tender.
In medium bowl, combine tuna, soup, paprika & salt.
Toss with fork, blend well.
Remove a thin slice from top of each potato.
Scoop out inside of potato from each slice and from the potato itself, leaving a shell.
Add potato to tuna mixture, tossing to mix well.
Spoon lightly into potato shells, mounding high.
Top each with with ½ slice of cheese.
Place in shallow baking pan.
Bake 10 minutes, or until cheese melts.
