Potato, Pepper and Sausage Casserole


2 large - Bell peppers, cut in 1 1/2" pieces
2 medium - Onions, cut in thin wedges
1 pound small - Red skinned potatoes, halved
12 ounces - Sausage, cut in 1/2" slices
Salt and pepper
1/4 cup - Olive oil
1/2 cup - Heavy cream
Parsley

Preheat oven to 400 degrees.
Place bell pepper, onion, potato and sausage in bowl.
Sprinkle with salt and pepper; toss with oil.
Transfer to 1 1/2 quart covered casserole.
Bake for 45 minutes.
Stir in the cream.
Cover and bake 15 minutes more.
Sprinkle with parsley.
