Baked Potato Puffs

Yield: 1½ dozen

Combine potatoes, butter or margarine, egg yolks, salt, dry mustard & pepper.
Beat on medium speed of an electric mixer until smooth.
Shape mixture into 2 inch balls.
Flatten balls to ½" thickness and place on a lightly greased baking sheet.
Brush surface of each potato ball with egg.

Bake at 400° for 12 minutes or until browned.
